Often called erroneously as Eastern Europe, it's really Central Europe. This region is still affordable compared to mainstream Europe. Large vibrant cities rival those to the east at a fraction of the cost such as Budapest and Warsaw/Krakow and Prague. They seem to be more bohemian and laid back than other big cities to the West but just as beautiful. Austria is sometimes classified along with these countries. So if you want to save a few bucks travel to Prague instead of Paris (food is prob 1/2 or 1/3 the price). Students in the West go to Budapest to party or have bachelor parties as much cheaper. Food in Poland is really cheap - cheaper than Hungary or Czech Rep but prob not as lively.
Once unexplored, it is now on the main tourist route but you can still escape them. Try finding hidden gems in smaller towns such as Cesky Krumlov, Gyor etc....
